Ingredients
1large onion, thinly sliced
1 tbspbutterfor caramelizing the onion
2 cupsall-purpose flour
1tbspbaking powder
1tspsalt
1/2tspsugar
1/2cupunsalted butter, cold and cubed
1cupGruyère cheese, shredded
3/4cupbuttermilk (plus extra for brushing)
1/4 tspblack pepper
fresh thymeoptional for garnish
Instructions
Caramelize the Onions:Melt butter in a skillet over medium heat. Add onions and cook, stirring occasionally, for 20-25 minutes until golden and caramelized. Set aside to cool.
Prepare the Dough:Preheat oven to 425°F (220°C). In a bowl, whisk together flour, baking powder, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Stir in cheese and onions.
Add Buttermilk:Gradually add buttermilk, stirring until just combined.
Shape the Dough (Flaky Layer Technique):Turn the dough onto a floured surface and pat into a 1-inch thick disk. Cut into 4 portions, stack, and press down. Repeat 3 times for layers, then pat into a final 1-inch thick disk. Cut biscuits with a cutter or glass.
Bake:Arrange biscuits on a baking sheet. Brush with buttermilk, sprinkle with thyme or black pepper, and bake for 12-15 minutes until golden.
